Any Given Sunday 

A collaboration between two chefs and a sommelier

Any Given Sunday is a series of collaborative pop ups in Brisbane by sommelier Kate Christensen with chef Mal Meiers and chef Tabitha Thomson, inspired by their mutual love of bringing seasonality, provenance and sustainability to the dining experience.


The Sunday long lunches will offer a set-menu of snacks, savoury and sweets courses. It will be a snapshot of both chef’s experiences and their shared ethos married with a specially curated beverage pairing by Kate (both alcoholic and non alcoholic will be available) featuring some of her favourite small producers. 


Kate and Mal met while working together in lauded restaurants Coda and Tonka and eventually decided to create the Food + Wine pop up in 2015. 


Since humble beginnings they have grown the concept to create a total of 14 pop up’s of varied lengths, offerings and styles both nationally and internationally. The focus of which has always been to showcase the seasonal produce of a region married with the local wines and beers made in-line with minimal intervention and sense of place.

In 2017, the couple took the concept overseas for a nine-month ‘EU Tour’ establishing pop ups across the south the France as well as in Brussels, London, Portugal and Tokyo.


On returning to Australia, they both settled into more permanent work and during their downtime they focused on taking Mal’s much-celebrated ‘Food for Thought’ charity events (for mental health) all around the country. During this time, the duo also designed a series of regular producer-featured events while running the hatted restaurant SUBO in Newcastle. 


Since late 2019, the pop ups have taken a back seat while the couple returned to their home state of Queensland to start a family. With Kate stepped back for a while to take on her new role of Motherhood and Mal found himself working as the head baker for the Agnes bakery during the height of COVID. He later moved into the head chef role at Gerard’s bar where he met Tabitha Thomson.  


Tabitha also from Queensland has gained experience across multiple disciplines working as a butcher as well as cooking at the Queensland Cricketers Club, the much-celebrated Arc dining and most recently at Middle Eastern inspired Gerard’s Bistro. 


Tabitha’s time spent working alongside former head chef of Arc dining Alanna Sapwell, (both at that venue and more recently at the nationally traveling Esmay pop-ups) has helped foster her appreciation for quality produce and celebrating provenance. It has also instilled an ethos for supporting sustainable practices in terms of produce, producers and creating supportive working environments. 


The trio behind the Any Given Sunday pop up series is excited to bring together their shared passion of creating considered and accessible dining experiences and to shake up the Brisbane scene over the coming months. 

What to expect: 

Food: Five courses consisting of snacks, two entrees, a main with a side & a dessert. The menu will be hyper-seasonal to give you the best produce available during that week.  

Drinks: 5 matching alcoholic beverages and non-alcoholic options will be provided as a package to pair with the food.
